Cocoa Chili Seasoning
This dark earthy and spicy blend of flavors works great as a rub for meats, as an intriguing addition to dressings and marinades, or as an addictive coating for mixed nuts.
Makes about 1 cup
3 TBS finest quality cocoa powder (alternatively use organic cocoa nibs toasted and finely ground)
3 TBS ancho chili powder
3 TBS sea or kosher salt
2 TBS fresh ground black pepper
1 TBS espresso powder
2 TBS brown sugar
2 tsp ground cumin
1 TBS ground coriander

Blend all ingredients well and store tightly covered. Shake or stir well before using.

Chipotle Spiced Pumpkin Dip

1 8oz package low fat cream cheese

1 cup pure pumpkin puree

1 TBS chipotle chile powder

1/2 tsp garlic powder

1/2 tsp onion powder

Salt and Pepper to taste

 

Combine softened cream cheese with chili powder, garlic powder, and onion powder in processor or blender.

Place cheese mixture in bowl and fold in the pumpkin puree, season to taste with salt and pepper.

Store in refrigerator and serve with raw veggies, crackers, or tortilla chips.
